The Feast of the Seven Fishes dinner on Christmas Eve has been an Italian-American tradition for many years. It is typically a lengthy dinner with at least seven fish or seafood courses, sometimes as many as twelve depending upon the family. The fish that are included and how they are prepared depend upon the long-standing traditions of the family. At Verlasso, our celebration is easy to agree on, so we decided to put our spin on this tradition and have a "Feast of the Seven Salmons"!
Dinner time should be a time to disconnect from the outside world. A safe haven to talk about the happenings in your life and the lives of those seated with you. A designated time to decompress, connect with loved ones and remove yourself from everyday stressors.
As we pause to think more deeply about fish and seafood, we must understand what realities we face and how simple our day to day choices can affect it. Sea life at all levels of the food chain are at risk. Worldwide demand for fish is increasing every year, with some of the most populous nations on the planet leading the fish-catching and consumption trends: China, Japan, and the United States. Our appetite for fish and seafood has left 90% of wild species depleted or exploited. Yet for all of this worry, there is good news. We simply need to be smarter about the way we use this resource. The oceans have an incredible way of rebounding when balanced fishery and aquaculture management is put into place.

For those of you who don’t know, Barton is an acclaimed chef as well as one of the most important thought leaders and change makers in the sustainable aquaculture space.
We are kicking off our commitment to this incredible cause by supporting the Kick Hunger Challenge in several of our retail partners across the country. With every pound of Verlasso purchased between now and December 15th when you shop at Festival Foods, Heinen’s, HyVee or Harmon’s, you will be donating 2 meals to the local food bank. These include the Chicago Food Bank, Cleveland Food Bank, Brown County Food and Hunger Network and many more! We are excited to support teams and chefs in this effort to fight hunger in their communities!
September couldn’t have started in a better way for Verlasso. For the first time in Verlasso’s short history, we were able to dip our fins in a market outside of the United States. Precisely in one of the largest markets for Atlantic Salmon: Brazil!

Wrapped in sustainable seafood tips and messages, the Verlasso food truck will begin with visits to Heinen’s stores on Saturday, May 13th. Tastes of mini waffles, seared Verlasso salmon and maple bacon bourbon jam will be served to those lucky enough to come to Heinen’s stores throughout the day! Cinco de Mayo has taken on a significance beyond that in Mexico. Here in the states the date has become a celebration of Mexican-American culture. Celebrate this occasion with a scrumptious spread of food from south of the border, including favorite Mexican recipes made with Verlasso salmon such as quesadillas, tacos, enchiladas and of course margaritas!
